Gullfoss is for mixes/masters but Soothe can be useful on individual tracks AND your final mix/master. I see Soothe as a great, flexible tool for fixing things but Gullfoss as a tool for enhancing the EQ balance/interaction of a full mix, it's way more subtle than Soothe. Get Soothe first then save up for Gullfoss (which is what I did).

It is said to be a magic tool. I tried the demo version. And yes, with really little effort, the result was pretty good. But when I heard the MP3 in the car or with poor headphones, it wasn't so good anymore.

Gullfoss is great for making things better overall with more broad strokes, whereas Soothe is a very unique tool for solving specific problems that would be hard to do without it. If you do a lot of recording of stringed instruments, vocals etc I'd go with Soothe.
